MARV’S RICE

2/3 cup regular rice

2 tbsp wild rice (optional)

2 tbsp dry minced onion

2 tbsp diced celery

2 tbsp grated carrot

2 tbsp chicken bouillon granules

1/8 tsp garlic powder

1/8 tsp black pepper

1-1/3 cups water

Combine all ingredients in casserole dish.

Bake, covered, at 350 degree for 45 minutes to 1 hour or until rice is done.

Before serving, stir in 1 tbsp butter.

Linda’s Note: My sister-in-law, Gwen, makes this once a week as Marv has heart problems. She uses low sodium bouillon. 

SPICY PORK CHOPS

2 lean pork chops, trim off all of the fat

1/4 cup honey

1/4 cup prepared mustard

1/4 tsp chili powder

Mix the sauce ingredients. Marinade the chops in the sauce overnight.

When ready to prepare, broil chops on grill or in oven till done. Serves 2.  

CHICKEN MACARONI CASSEROLE

2 cups raw macaroni

6 to 8 slices American cheese

4 cups cooked, cubed chicken

2 cans cream of chicken soup

2-1/2 cups milk

Spread the raw macaroni in a greased 9 x 13 pan.

Cover with sliced cheese to completely cover the macaroni. Spread the chicken over-all.

Mix the soups and the milk. Pour over the chicken. Salt to taste.

Bake, covered, at 350 degree for 45 minutes. DO NOT STIR DURING BAKING TIME. Serves 6. 

LEMON LIME JELLO MOLD

Large, 6 oz pkg lime gelatin

2 cups boiling water

1 can lemon pie filling

1 cup cold water

Mix all ingredients well. Pour in large jello mold, or pretty glass bowl.

Chill till set. Serve with Cool Whip. Serves 6. 

PARMESAN OVEN FRIED POTATOES

Mix in a bowl:

1/2 cup vegetable oil (I use canola oil)

2 tbsp grated Parmesan cheese

1 tsp salt

1/2 tsp garlic powder

1/2 tsp paprika

1/4 tsp pepper

Cut 5 or 6 medium potatoes into wedges. Place in a shallow pan, in a single layer.

Brush the above mixture over the potatoes.

Bake at 375 degree for about 45 minutes. Will serve 6. 

MAPLE MUFFINS

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup chopped nuts

2/3 cup milk

1/2 cup pure maple, or maple-blended syrup

1 egg

1/4 cup canola oil

Combine flour, baking powder, salt and nuts in a mixing bowl.

Combine remaining ingredients in a separate bowl and mix well,

Add liquid ingredients to dry ingredients and stir just until the flour is moistened.

Spoon batter into 12 greased muffin cups. Bake at 400 degree for 15 to 20 minutes or until a wooden pick inserted in the muffin comes out clean

Makes 12 muffins.
