Hukki summer sausage is more than a pretty slice | Higgins Eats It
OSHKOSH - Hukki summer sausage from Silver Creek Specialty Meats is everything a summer sausage is supposed be: tangy, spicy and salty with a punch of garlic wrapped in beef and pork. It also adds a pleasant visual punch to cheese and sausage platters.
Each Hukki stick is embossed with a honeycomb pattern tied with a thick fibrous twine. The overall effect is reminiscent of Old World butcher shops.
Silver Creek achieves the honeycomb pattern with an imported Hukki net casing, co-owner Bill Kamlich said. To achieve the golden-brown color, the Oshkosh-based meat processor cold smokes this version of its summer sausage.
"We like the look," says Kamlich when asked why they put in the extra effort and cost to make Hukki.
The gift of visual delight is more than skin deep. Each slice from the honeycomb pattern sausage stick yields a flower-shaped piece that fits perfectly on round crackers like Ritz.
Allow each bite to linger, and there is a slight melting mouthfeel. I asked Kamlich if I was imagining that sensation. Nope. He says that's due to the near equal portions of pork and beef in the Hukki recipe.
That melting sensation is a big part of what makes it a perfect partner with aged cheddar, which likewise will melt in your mouth.
Still, it's a summer sausage that also pairs well with Colby, mild cheddars and other common cheese tray slices.
It's also a nice way to fancy-up your cheese and sausage platter without needing any actual artistic talent or additional effort beyond slicing a summer sausage. There's your holiday party cheat for the season.
