Two days ago, Elizabeth, 9 1/2, was here for the weekend.

Our yard still had a few snow banks, but with the almost 70-degree temperature, it was slowly melting.

Elizabeth came running into the house and into her room. She put her bathing suit on and ran out the door. This got John and I out the door, too.

Seems she and the two girls next door had set up the hose and sprinkler in their yard, and were running through it. With snow not 30 feet away, there were warm and having fun in the sprinkler.

I sure wish I had thought to take a picture of that one - Linda.

PS: Elizabeth told me she thought she may need a new swimsuit for here. Hers was getting "short." I looked things over; at almost 10, she is a very small person, but gee, a "5-toddler" bathing suit?!?! We will go shopping at Wal-Mart next week.

Pineapple cake

2 large eggs

2 cups sugar

2 cups all-purpose flour

1 teaspoon baking soda

20-ounce can crushed pineapple with juice

Mix together and pour into ungreased 9 x 12 utility baking pan.

Bake in preheated oven at 350°F for 30-35 minutes.

Frost when cool.

Frosting:

8-ounce cream cheese at room temperature

1 stick butter at room temperature

1 teaspoon vanilla

1-1/2 cups powdered sugar

Beat frosting till creamy and spread on cake.

Will serve 9.

Fry bread, Indian bread, and Southern Dawg bread

(Take your choice of names)

4 cups all-purpose flour

2 teaspoons salt

2 teaspoons baking powder

1/2 cup powdered milk

Water - enough to make a bread-dough consistency

Mix all dry ingredients together; then add the water. Mix well and pinch off pieces of dough into balls; flatten balls down - they will not get as small as tortillas, but will get at least 1/2 shorter.

Fry in fry pan in 34-inch hot vegetable oil till golden brown, turning to brown both sides. Drain on paper towel.

Serve warm with honey.

Ship wreck casserole

6 or 7 large potatoes, peeled or washed, and sliced

1 medium onion, diced

1 large lean brown beef

1 can red kidney beans

Salt and pepper to taste

1 can tomato soup

In a casserole dish or roasting pan, put potatoes, onion, ground beef, kidney beans, salt and pepper. Put soup evenly over the top.

Bake at 350ºF for 1 1/2 hours or until potatoes are done.

Serves about 4.

Sweet and sour green beans

2 or 3 strips of bacon, cut up

1/2 small onion, cut up

Saute in skillet until lightly browned.

Add:

1 tablespoon all-purpose flour

2-1/2 tablespoons sugar

2 or 3 tablespoons vinegar

Stir until sauce is smooth.

Add a little salt and pepper

1/2 the juice from 1 can green beans

Stir till blended.

Pour in the beans and heat slowly for 10 minutes.

Serves about 4.

Chicken salad

4 cups cooked, cut-up chicken

1 cup pineapple tidbits, drained

1 cup chopped walnuts

1 cup seedless grapes

1-1/2 cups mayonnaise

1/2 cup celery, coarsely chopped

1 cup bananas, chopped in chunks

Mix together and serve on lettuce leaf as a main dish.
