I have found recipes that are like the pouches of cookie mix you can buy in the cake mix section of the grocery store. These are much more economical.

COPYCAT BETTY CROCKER SUGAR COOKIE MIX

1-1/2 cups all-purpose Flour

3/4 cup White Sugar

1/2 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

Mix together and store in a quart-size ziplock bag.

Write instructions on the bag to add:

1 Stick Softened Butter

1 Large Egg

1/2 teaspoon Vanilla Extract

Mix, and drop on sprayed cookie sheets, Bake at 350°F for 9-11 minutes.

COPYCAT BETTY CROCKER CHOCOLATE CHIP COOKIES

1 cup all-purpose Flour

1/4 cup White Sugar

1/2 cup Brown Sugar

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

3/4 cup Chocolate Chips

Mix together and store in a quart-size ziplock bag.

Write instructions on the bag to add:

1 Stick Softened Butter

1 Large Egg

1/2 teaspoon Vanilla Extract

Mix, and drop on sprayed cookie sheets, Bake at 350°F for 9-11 minutes.

COPYCAT BETTY CROCKER OATMEAL COOKIES

1 cup all-purpose Flour

1/2 cup White Sugar

1/2 cup Brown Sugar

1-1/2 cups Rolled Oats

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1 teaspoon Cinnamon

Optional: 1/2 Cup Raisins and/or Nuts

Mix together and store in a quart-size Ziplock bag.

Write instructions on the bag to add:

1 stick melted Butter

1 Large Egg

1/2 teaspoon Vanilla Extract

Mix, Refrigerate for 30 Minutes.

Mix, and drop on sprayed cookie sheets, Bake at 350°F for 9-11 minutes.

COPYCAT BETTY CROCKER GINGERBREAD COOKIES

1-3/4 cups all-purpose Flour

3/4 cup Dark Brown Sugar

3/4 teaspoon Baking Soda

1/2 teaspoon Salt

1/2 tablespoon Ginger

1-1/2 teaspoon Cinnamon

1/4 teaspoon Nutmeg

1/4 teaspoon Cloves

Mix together and store in a quart-size Ziplock bag.

Write instructions on the bag to add:

1/2 Stick Softened Butter

1 Large Egg

1/8 Cup Molasses

Mix and Bake at 350°F for 9-11 minutes.

Mix, and drop on sprayed cookie sheets, Bake at 350°F for 9-11 minutes.

LEMON SALAD RE-DONE

I made the Lemon Salad again, and got even better results with my changes - Linda

1 can lemon pie filling

1 can fruit cocktail, drained

1 can (any size) Mandarin oranges, drained

1 can cling peaches, cut each peach in half, drained

1 can pears - I had 1/2 pears, and cut in 6 pieces each - drained

5 very large, or 8 regular fresh strawberries, washed and cut in 1/4's

1/3 container Cool Whip (it was all I had on hand)

Put pie filling in a bowl. Add the fruits and mix gently. Add Cool Whip.

Put lid or saran on top of bowl and refrigerate until ready to eat.

This tasted better to John and I on the 2nd day, but is wonderful at either time.

If you add more Cool Whip, you will cut down on the tartness of the lemon.

Would be nice serves with crushed vanilla wafers on top of each serving dish, a nice dab of Cool Whip, and a half of a fresh strawberry.

BAKED CHOP SUEY

1 pound hamburger, browned and drained

Put hamburger in a small roasting pan, or 3-quart casserole.

Add:

2 medium onions, chopped

1 cup chopped celery

1 can cream of chicken soup

1 can cream of mushroom soup

1 cup water

1/2 cup rice

1/4 cup soy sauce

Salt and Pepper to taste

Bake at 350°F, covered, for about an hour, or till celery is done.

Add:

1 cup chow mien noodles.

Cover and bake 15 minutes more.

Serves 6.
