Sausage workshop, Feb. 15

Dodge County University of Wisconsin Extension is offering a "hands-on" workshop where participants will learn to make summer sausage, Wisconsin brats and form jerky from ground meat.

UW Meat Specialist Jeff Sindelar and UW Extension Educator Bonnie Borden will be the guides.

Participants will gain confidence in sausage-making skills as they help mix, stuff and link sausages. Heritage sausage stuffers crank out the products and sampling is part of the fun. There will be sharing of ideas as participants work and time to ask questions.

The workshop fee is $25 per participant to cover cost of product and handouts.

Participants should bring a small cooler and ice pack with them to take their product home in a safe manner. Class is limited to only 50 participants. Reservations will be taken on a "first come-first serve" basis until the workshop limit of 50 is reached.

To reserve a spot for the class, mail a check, made payable to the Dodge County UW Extension along with name, address and phone number and number of participants to: Dodge County UW Extension, 127 East Oak Street, Juneau WI 53039.

Registration deadline is Monday, Feb. 7.
